Sherry Cobbler

Sherry Cobbler
A long drink made with syrup and fresh fruit garnishes, Sherry Cobbler is the original, but there are now numerous and often more potent variations.

serves 7

6-8 cracked ice cubes
'A tsp sugar syrup
1 tsp clear Curacao
4 measures Amontillado sherry
To decorate
pineapple wedges twist of lemon peel

Fill a wine glass with crushed ice. Add the sugar syrup and Curasao and stir until a frost forms. Pour in the sherry and stir well. Decorate with pineapple wedges speared on a cocktail stick and the lemon twist.

Variations

Port Wine Cobbler:

put 1 teaspoon caster sugar into a chilled wine glass and add 2 measures sparkling mineral water. Stir until the sugar has dissolved. Fill the glass with cracked ice and pour in 3 measures ruby port. Decorate with a slice of orange and a cocktail cherry.

Champagne Cobbler:

put 4-6 cracked ice cubes into a goblet. Pour 1 measure brandy and 1 measure clear Curacao over the ice and top up with chilled champagne. Decorate with a slice of orange.

Bourbon Cobbler:

put 1 teaspoon caster sugar into a tall, chilled glass and dash lemon juice over it. Add 6 cracked ice cubes and pour in 2 measures bourbon and 2 measures Southern Comfort. Top up with soda water and stir to mix. Decorate with a peach slice.

Brandy Cobbler:

put 1 teaspoon caster sugar into a small, chilled tumbler and add 3 measures sparkling mineral water. Stir until the sugar has dissolved, then fill the glass with cracked ice. Pour in 2 measures brandy and stir well. Decorate with a slice of lemon and a cocktail cherry.

Rum Cobbler:

put 1 teaspoon caster sugar into a chilled goblet. Add 2 measures sparkling mineral water and stir until the sugar has dissolved. Fill the glass with cracked ice and pour in 2 measures white rum. Stir well and decorate with a lime slice and an orange slice.
