Rickey
The classic version of this cocktail is based on gin, but other spirits are also used, mixed with lime or lemon juice and soda water with no sweetening.

serves 1

4-6 cracked ice cubes
2 measures gin
1 measure lime juice
soda water, to top up
slice of lemon,

to decorate

Put the cracked ice cubes into a chilled highball glass or goblet. Pour the gin and lime juice over the ice. Top up with soda water.
Stir gently to mix and decorate with the lemon slice.

Variations

Whiskey Rickey:

substitute American blended whiskey for the gin and decorate with a slice of lime. Sloe Gin Rickey:

substitute sloe gin for the dry gin. Decorate with a slice of lime.

Apple Rum Rickey:

put 4-6 cracked ice cubes into a cocktail shaker. Pour 1 measure apple brandy, 'A measure white rum and 'A measure lime juice over the ice and shake vigorously until a frost forms. Half fill a chilled tumbler with cracked ice cubes and strain the cocktail over them. Top up with sparkling mineral water and decorate with a lime twist.

Kirsch Rickey:

half fill a chilled tumbler with cracked ice cubes. Pour 2 measures kirsch and 1 tablespoon lime juice over the ice. Top up with sparkling mineral water and stir gently. Decorate with stoned fresh cherries.
