Slivovitz is a colourless plum brandy, usually made from Mirabelle and Switz plums. It is usually drunk straight, but can add a fruity note to cocktails. If ii not available, you could substitute apricot, peach or cherry brandy - all fruit from the same family - but the cocktail will not look or taste quite the same.

serves 7

4-6 cracked ice cubes
dash of sugar syrup
1 measure slivovitz
1 measure apple brandy 1 measure gin
1 measure orange juice

Put the cracked ice cubes into a cocktail shaker. Dash the sugar syrup over the ice and pour in the slivovitz, apple brandy, gin and orange juice. Shake vigorously until a frost forms. Strain into a chilled cocktail glass.

Fruit brandy cocktails

Cadiz:

put 4-6 cracked ice cubes into a cocktail shaker. Pour 1 measure blackberry brandy, 1 'A measures dry sherry, '/2 measure triple sec and 1/2 measure single cream over the ice. Shake vigorously until a frost forms. Strain into a small, chilled tumbler.

Chi-Chi:

half fill a chilled tumbler with cracked ice cubes. Pour 2 measures rum and 4 measures pineapple juice over the ice and stir to mix. Float '/2 measure blackberry brandy on top by pouring it gently over the back of a teaspoon.

Vanity Fair:

put 4-6 cracked ice cubes into a cocktail shaker. Pour 2 measures apple brandy, 1 measure cherry brandy and 1/2 measure Maraschino over the ice. Shake vigorously until a frost forms. Strain into a chilled cocktail glass and float 1 tablespoon amaretto on top by pouring it gently over the back of a teaspoon.

Tulip:

put 4-6 cracked ice cubes into a cocktail shaker. Pour 1 measure apple brandy, 1 measure sweet vermouth, '/2 measure apricot brandy and '/2 measure lemon juice over the ice. Shake vigorous until a frost forms, then strain into a chilled cocktail glass.
