Moonraker
Moonraker
A powerful mix, this cocktail is more likely to fire you into orbit than to reduce you to trying to rake the moon's reflection out of a pond.
serves /1
4-6 cracked ice cubes
dash of Pernod
1 measure brandy
1 measure peach brandy
1 measure quinquina
Put the cracked ice cubes into a mixing glass. Dash Pernod over the ice and pour in the brandy, peach brandy and quinquina.
Stir well to mix, then strain into a chilled highball glass.
Lunar modules
Moonshot:
put 4-6 cracked ice cubes into a mixing glass. Dash Tabasco sauce over the ice and pour in 2 measures gin and 3 measures clam juice. Stir well to mix, then strain into a chilled tumbler.
Moon Landing:
put 4-6 cracked ice cubes into a cocktail shaker. Pour 1 measure vodka, 1 measure Tia Maria, 1 measure amaretto and 1 measure Bailey's Irish Cream over the ice. Strain into a chilled shot glass.
Moonlight:
put 4-6 cracked ice cubes into a cocktail shaker. Pour 2 measures apple brandy, 2 measures lemon juice and 1/2 teaspoon sugar syrup over the ice. Shake vigorously until a frost forms. Half fill a small, chilled tumbler with cracked ice cubes and strain the cocktail over them.
Moonrise: put 300 ml/10 fl oz medium dry cider into a saucepan and add 1 tablespoon brown sugar, a pinch of ground cinnamon and a pinch of freshly grated nutmeg. Heat gently, stirring until the sugar has dissolved. Pour into a warmed punch glass and stir in 1 measure apple brandy. Float 2 teaspoons double cream on top by pouring it gently over the back of a teaspoon.
Bartender's Tip
Quinquina is a quinine-flavoured, wine-based aperitif from France. It is not widely available but the Dubonnet company is one of the largest producers and does export its brand St. Raphael. There is no satisfactory substitute, although there are other drinks flavoured with quinine.
