Eye of the Hurricane
In recent years, a vast range of fruit juices and syrups has become widely available. These can extend the range of the cocktail bar and are particularly useful for non-alcoholic mixed drinks, which were once heavily dependent on the rather tired old favourites of orange, lemon and lime juices.
serves 1
4-6 cracked ice cubes 2 measures passion fruit syrup
1 measure lime juice
bitter lemon, to top up
slice of lemon, to decorate
Put the cracked ice cubes into a mixing glass. Pour the syrup and lime juice over the ice and stir well to mix. Strain into a chilled tumbler and top up with bitter lemon. Stir gently and decorate with the lemon slice.
Variations
Tropical Storm:
put 4-6 cracked ice cubes into a cocktail shaker. Pour 2 measures pineapple juice, 2 measures lime juice, 1 measure passion fruit syrup and 'A teaspoon orgeat over the ice. Shake vigorously until a frost forms. Strain into a small, chilled tumbler and decorate with a pineapple wedge. Daydream: half fill a tall, chilled tumbler with cracked ice cubes. Pour 1/2 measures passion fruit syrup over the ice and top
up with chilled orange juice. Stir gently to mix and then sprinkle with freshly grated nutmeg.
Quiet Passion:
put 4-6 cracked ice cubes into a cocktail shaker. Pour 4 measures grapefruit juice, 4 measures white grape juice and 1 measure passion fruit juice over the ice. Shake vigorously until a frost forms. Half fill a chilled tumbler with cracked ice cubes and strain the cocktail over them. Decorate with a slice of lime.
