Zombie
Zombie
The individual ingredients of this cocktail, including liqueurs and fruit juices, vary considerably from one recipe to another, but all zombies contain a mixture of white, golden and dark rum in a range of proportions.
serves 7
4-6 crushed ice cubes
2 measures dark rum
2 measures white rum
1 measure golden rum
1 measure triple sec
1 measure lime juice
1 measure orange juice
1 measure pineapple juice
1 measure guava juice
1 tbsp grenadine
1 tbsp orgeat
1 tsp Pernod
To decorate
sprig of fresh mint pineapple wedges
Put the crushed ice cubes into a blender and add the three rums, triple sec, lime juice, orangejuice, pineapple juice, guava juice, grenadine, orgeat and Pernod. Blend until smooth. O Pour, without straining, into a tall, chilled Collins glass and decorate with the mint sprig and pineapple wedges.
Variations
Walking Zombie:
put 4-6 cracked ice cubes into a cocktail shaker. Pour 1 measure white rum, 1 measure golden rum, 1 measure dark rum, 1 measure apricot brandy, 1 measure lime juice, 1 measure pineapple juice and 1 teaspoon sugar syrup (see page 11) over the ice. Shake vigorously until a frost forms. Half fill a chilled tumbler with cracked ice cubes and strain the cocktail over them. Decorate with orange and lemon slices.
Zombie Prince:
put 4-6 cracked ice cubes into a mixing glass. Dash Angostura
bitters over the ice, pour in 1 measure white rum, 1 measure golden rum, 1 measure dark rum, 1/2 measure lemon juice, '/2 measure orange juice and '/2 measure grapefruit juice and add 1 teaspoon brown sugar. Stir to mix well, then strain into a tall, chilled tumbler.
Bartender's Tip
Orgeat is an almond-flavoured syrup. If you can't find it, you could substitute the same amount of amaretto, which is more widely available.
