serves 7
5-6 cracked ice cubes
3 measures gin
2 measures lemon juice
'/2 measure sugar syrup
soda water, to top up slice of lemon,
To decorate
Put the cracked ice into a cocktail shaker. Pour the gin, lemon juice and sugar syrup over the ice. Shake vigorous until a frost forms.
Strain into a tall, chilled tumbler and top up with soda water. Decorate with a slice of lemon.
Variations
John Collins: substitute Dutch gin or
genever for the dry gin.
Mick Collins: substitute Irish whiskey
for the gin.
Pierre Collins: substitute brandy for
the gin.
Pedro Collins: substitute white rum for
the gin.
Colonel Collins: substitute bourbon for
the gin.
Mac Collins: substitute Scotch whisky
for the gin.
Ivan Collins: substitute vodka for the gin
and decorate with a slice of orange and a
cocktail cherry.
Belle Collins: crush 2 fresh mint sprigs
and place in a tall, chilled tumbler. Add
4-6 crushed ice cubes and pour in
2 measures gin, 1 measure lemon juice
and 1 teaspoon sugar syrup
fop up with sparkling water, stir gently and decorate with a fresh mint sprig. Juan Collins: half fill a chilled tumbler with cracked ice and pour in 2 measures white tequila, 1 measure lemon juice ana
1 teaspoon sugar syrup top up with sparkling mineral water and stir gently.
Decorate with a cocktail cherry. Country Cousin Collins: put 4-6 crushed ice cubes into a blender. Dash orange bitters over the ice and pour in 2 measures apple brandy, 1 measure lemon juice and '/2 teaspoon sugar syrup (see page 11). Blend at medium speed for 10 seconds. Pour into a chilled tumbler and top up with sparkling water. Stir gently and decorate with a slice of lemon.
