serves 7
4-6 cracked ice cubes dash of yellow Chartreuse
2 measures gin 1 measure sweet vermouth
O Put the cracked ice cubes into a mixing glass. Dash the Chartreuse over the ice and pour in the gin and vermouth. Stir well to mix. Strain into a chilled cocktail glass.
Variations
Clover Club:
put 4-6 cracked ice cubes into a cocktail shaker. Pour 2 measures gin, 1 measure limejuice and 1 measure grenadine over the ice and add 1 egg white. Shake vigorously until a frost forms. Strain into a chilled cocktail glass. Grand Royal Clover Club: make a Clover Club and substitute lemon juice for the limejuice.
Racquet Club:
put 4-6 cracked ice cubes into a mixing glass. Dash orange bitters over the ice and pour in 1 measure gin and 1 measure dry vermouth. Stir well to mix, then strain into a chilled cocktail glass.
Pegu Club:
put 4-6 cracked ice cubes into a cocktail shaker. Dash limejuice, Angostura bitters and orange bitters over the ice and pour in 1 measure gin and 1 measure clear Curacao. Shake vigorously until a frost forms, then strain into a chilled cocktail glass.
Key Club:
put 4-6 cracked ice cubes into a cocktail shaker. Pour 2 measures gin, '/2 measure dark rum, '/2 measure Falernum and Vz measure limejuice over the ice. Shake vigorously until a frost forms. Strain into a cocktail glass and decorate with pineapple wedges.
Bartender's Tip
Falernum is a Caribbean syrup made from fruit, sugar cane and spices. It is used to sweeten both alcoholic and non-alcoholic cocktails. It is available from specialist Caribbean stores, but may be difficult to find in some places. There is no real substitute, but you could try using a mixture of sugar syrup guava, pineapple and mango juices, a pinch of cinnamon and a pinch of freshly grated nutmeg. Experiment with the proportions until you find a flavour that you like.
