Brave Bull
Spain's historical associations with Mexico has left many legacies - not least a taste for bullfighting - although whether this cocktail is named in tribute to the animal or because it makes the drinker proverbially brave is anyone's guess.

serves 7

4-6 cracked ice cubes
2 measures white tequila
1 measure Tia Maria
spiral of lemon peel, to decorate

Put the cracked ice into a mixing glass. Pour the tequila and Tia Maria over the ice and stir well to mix. Strain into a chilled goblet and decorate with the spiral of lemon peel.

Ole! Matador:

put 4-6 cracked ice cubes into a cocktail shaker. Pour 1 measure white tequila, 2 measures pineapple juice and 1 measure lime juice over the ice. Shake vigorously until a frost forms. Fill a chilled cocktail glass with cracked ice and strain the cocktail over it.

Frozen Matador:

put 4-6 crushed ice cubes into a blender and add 2 measures golden tequila, 2 measures pineapple juice and 5 measure lime juice. Blend until smooth and pour into a chilled goblet. Decorate with a slice of lime.

Toreador:

put 4-6 cracked ice cubes into a cocktail shaker. Pour 2 measures white tequila, 2 measure white creme de cacao and 1/2 measure single cream over the ice. Shake vigorously until a frost forms. Strain into a chilled cocktail glass.

Bull's Milk:

put 4-6 cracked ice cubes into a mixing glass. Pour 2 measures brandy, 1 measure dark rum, 150 ml/ 5 fl 02 milk and 2 teaspoon sugar syrup over the ice and stir well to mix. Pour, without straining, into a chilled tumbler and sprinkle with freshly grated nutmeg.

Blood and Sand:

put 4-6 cracked ice cubes into a cocktail shaker. Pour 1 measure Scotch whisky, 'A measure cherry brandy, 'A? measure sweet vermouth and 'A measure orange juice over the ice. Shake vigorously until a frost forms. Strain into a chilled cocktail glass.
