Acapulco
This is one of many cocktails that has changed from its original recipe over the years. To begin with, it was always rum-based and did not include any fruit juice. Nowadays, it is increasingly made with tequila, because this has become better known outside its native Mexico.

serves 7

10-12 cracked ice cubes
2 measures white rum
'/2 measure triple sec
'/2 measure lime juice
1 tsp sugar syrup
1 egg white sprig of fresh mint, to decorate

Put 4-6 cracked ice cubes into a cocktail shaker. Pour the rum, triple sec, lime juice and sugar syrup over the ice and add the egg white. Shake vigorously until a frost forms 9 Half fill a chilled highball glass with cracked ice cubes and strain the cocktail over them. Decorate with the mint sprig.

Variations

Acapulco Gold:

put 4-6 cracked ice cubes into a cocktail shaker. Pour 1 measure golden tequila, 1 measure golden rum, 2 measures pineapple juice, 1 measure coconut cream and 1 measure grapefruit juice over the ice. Shake vigorously until a frost forms. Half fill a small, chilled tumbler with cracked ice cubes and strain the cocktail over them.

Acapulco Clam Digger:

put 4-6 cracked ice cubes into a tall tumbler. Dash Tabasco sauce, Worcestershire sauce and lemon juice over the ice and pour in 1 '/2 measures white tequila, 3 measures tomato juice and 3 measures clam juice. Add 2 teaspoons horseradish sauce. Stir well to mix, decorate with a slice of lime and serve with a straw.
