Absinthe Friend
Absinthe Friend
A popular cocktail ingredient, the digestif absinthe is no longer available. Flavoured with wormwood, which it is said reacts with alcohol to cause brain damage, absinthe was banned by law in 1915. However, various pastis, includii Pernod and Ricard, are still available and make good substitutes.
4-6 cracked ice cubes
dash of Angostura bitters
dash of sugar syrup
1 measure Pernod
1 measure gin
Put the cracked ice cubes into a cocktail shaker. Dash the bitters and sugar syrup over the ice and pour in the Pernod and gin. Shake vigorously until a frost forms. Strain into a chilled glass.
