This is another good cocktail for a Sunday brunch, when alcoholic drinks can be too soporific and you end up wasting the rest of the day, but you still want something to wake up the taste buds and set them tingling.
serves 7
10-12 cracked ice cubes
Tabasco sauce
Worcestershire sauce
4 measures tomato juice
4 measures clam juice
;A tsp horseradish sauce
celery salt and freshly ground
black pepper
To decoratecelery stick wedge of lime
Put 4-6 cracked ice cubes into a cocktail shaker. Dash the Tabasco sauce and Worcestershire sauce over the ice, pour in the tomato juice and clam juice and add the horseradish sauce. Shake vigorously until a frost forms. Fill a chilled Collins glass with crackeo ice cubes and strain the cocktail over them. Season to taste with celery salt and pepper and decorate with a celery stick and lime wedge.
Variations
New England Party:
put 6-8 crushed ice cubes into a blender and dash Tabasco sauce, Worcestershire sauce and lemon juice over the ice. Add 1 medium chopped carrot, 2 chopped celery sticks, 300 ml/ 10 fl oz tomato juice and 150 ml/5 fl oz clam juice. Blend until smooth. Transfer to a jug, cover with clingfilm and chill in the refrigerator for about 1 hour. Pour the cocktail into 2 chilled tumblers and
season with salt and freshly ground black pepper to taste. Decorate with cocktail olives speared on a cocktail stick.
Bartender's Tip
A commercial product called Clamato Juice - a mix of tomato and clam juices -is available from some supermarkets and delicatessens and can be substituted for the separate ingredients.
