Chablis
Chablis comes from north Burgundy and is also coinencidently the name of a town located there.
This particular region is separated into four classifications, Chablis Grand Cru, Premier Cru, Petit and Chablis.
Such wine with this name are white wines from the Chardonnay grape, the area is made up of approximately 18 small villages located around the main Chablis area. The region is divided in two by the Serein River.
The Grand Cru Chablis's are intertwined with 3 interlocking slopes on the right bank overlooking the Serein river. The 7 Grand Cru vineyards are, Blanchot, Vaudesir, Valmur, Les Clos, Bougros, Grenouilles and Les Preuses.
The Premier Cru chablis's are positioned on both the left and the right hand sides of the river. The soil has a unique combination of clay and chalk called “Kimmeridgian”, and it is littered with fossils of comma-shaped oysters. This gives the wine quite a unique aray of flavors and aromas.
The fruit flavour is sometimes hard to detect, as Chablis's northern location produces grapes that just barely reach the proper levels for cultivation. There are often flavors of green apples, pineapples and pink grapefruits. Finally Chablis wines are also incarnate by their strong acidity, often making the wines undrinkable after aging.
