Carolina
White tequila is most commonly used for mixing cocktails, but some require the mellower flavour of the amber-coloured, aged tequilas, which are known as golden tequila or anejo.
serves 1
4-6 cracked ice cubes 3 measures golden tequila
1 tsp grenadine
1 tsp vanilla essence
1 measure single cream
1 egg white
Put the cracked ice cubes into a cocktail shaker. Pour the tequila, grenadine, vanilla and cream over the ice and add the egg white. Shake vigorously until a frost forms. Strain into a chilled cocktail glass. Sprinkle with cinnamon and decorate with a cocktail cherry.
The golden touch
Grapeshot:
put 4-6 cracked ice cubes into a cocktail shaker. Pour 2 measures golden tequila, 1 measure clear Curasao and 1 '/2 measures white grape juice over the ice and shake vigorously until a frost forms. Strain into a chilled cocktail glass.
Montezuma:
put 4-6 crushed ice cubes into a blender and add 2 measures golden tequila, 1 measure Madeira and 1 egg yolk. Blend until smooth, then pour into a chilled cocktail glass.
Chapala:
put 4-6 cracked ice cubes into a cocktail shaker. Pour 2 measures golden
tequila, 2 measures orange juice, 1 measure lime juice, 1/2 measure trip e and 1/2 measure grenadine over the ice Shake vigorously until a frost forms. half fill a chilled tumbler with cracked ice cubes and strain the cocktail over them
Pinata:
put 4-6 cracked ice cubes into a cocktail shaker. Pour 2 measures golden tequila, 1 measure creme de banane and 1+1/2 measures lime juice over the ice and shake vigorously until a frost forms. Strain the mixture into a chilled cocktail glass.
